Pad SeeEw

Phad SeeEw (Stir Fry Flat Noodle with Black Soy Sauce)

It's a one of Thai street food. If you like "Pad Thai", you will like this menu.





Brief Ingredients:
1. Flat rice noodle ....... 500 grams
2. Tender pork  ...... 100 grams (i mingle it with egg white for 30 minutes to soften)
3. Chinese Kale ....... 80 grams
4. Chicken egg ....... 2
5. Bean paste ....... 1 table spoon
6. Black soy sauce ..... for coloring
7. Light soy sauce ....... 1 table spoon
8. Mince garlic  ...... 1 table spoon
9. Sugar ...... 1 table spoon
10. Cooking oil ……. 1 table spoon (I like pork oil J)

Mix the flat noodle with black soy sauce until its color turn dark


With medium heat, put oil and mince garlic.

Fry the garlic until it turn lightly brown and release aroma.

Add the slice pork, keep stirring.

I add a bit of light soy sauce. When the pork is ripe, push it on one side of pan.

Crack the eggs onto pan, stir it.

Stir until it’s slightly cook (about 30 seconds to a minute)

Add noodle and stalk of kale, blend it with pork and egg, add bean paste, sugar, light soy sauce

I don’t prefer light color, so I add black soy sauce again.

Lastly, add kale leaves and cook until its color turn to dark green.

Ready to serve!!

Baked Shrimp with Glass Noodle

In Thai, it's called "Kung Aop Woonsen"
     Kung = shrimp
     Aop = baked
     Woonsen = glass noodle

I think you can cook this menu with ingredients from your country. It's easy and not take time to prepare (except peel off the shrimp)... Hope you enjoy it :) 



Estimated recipe for 2 dishes:
  1. Glass noodle ..... i use 80 g
  2. Shrimp or Prawn ..... up to you (but today i have very little)
  3. Beacon or pork fat
  4. Slice ginger and garlic
  5. Roughly chopped for Garden celery, Coriander root
  6. Ground Szechuan pepper ..... 1/2 table spoon 
  7. Ground black pepper ..... 1 table spoon
  8. Coriander seed (optional) ..... 1 table spoon
  9. Oyster sauce ..... 3 table spoons
  10. Soy sauce or Maggi sauce ..... 2 table spoons
  11. Chinese liquor (this type used for cooking) ..... 3 table spoons
  12. A bit water, oil (i prefer pork oil) or butter


Mix all sauces, liquor and a bit of coriander seed

Soak glass noodle until it become soft, then mix with the sauce prepared.


Add oil onto pan, adjust fire to medium heat (i use induction cooker). When oil becomes hot, add ginger, garlic, ground pepper, coriander seed/root. Fry until aroma is released.
Add beacon, i don't like more fat so i cook until beacon almost crispy.

Adjust temperature to low heat, add glass noodle, shrimp onto pan.
Top with garden celery.
Cover with lid, you can open lid to check. If glass noodle is too dry, sprinkle with a bit water. Cook until you can smell the aroma ... it's ready to serve !!

Pad Thai Korat


Pad Thai Korat

This menu is well-known for Thai street food. You can easily enjoy it when you are in Thailand. Okay, let me show you how to cook it.

This picture is a sub type of Phad Thai named "Phad Thai Korat" (Korat is one province in Thailand) It's taste is more sweet than normal Phad Thai.

Ingredients


this portion can be served for 2 large dishes




1. Rice noodle ..... 200 grams
2. Pork ..... 50 grams
3. Chicken eggs ..... 2 eggs
4. Red onion ..... 1/4 cup
5. Lime (for seasoning)
6. Coconut sugar .... 1/3 cup
7. Tamarind paste .... 1/3 cup
8. chinese chives (green leaf in picture) ..... 1/4 cup
9. Bean sprout for topping (i can't find for this time) ..... 1/3 cup
10. water ..... 300 ml

  • Dissolve tamarind and coconut sugar together (i use hot water to melt it) ... the taste should be 50:50 sweet and sour
  • Cut Chinese chives into 2 inches long
  • Slice red onion


Rinse 2 table spoon of oil + dissolved tamarind into pan. After it becomes hot, put red onion.


Cook until you smell the onion aroma


Put pork


Rinse the water about 300 ml.


Wait until water boil, put noodle.


Dry noodle will absorb the soup, cook until it become soft and the water evaporate. 

put eggs



When noodle become dry, put Chinese chives
 

Cook until 2-3 minutes then turn of fire.


Topping it with lime and ground peanut


For me, i like to drop a bit ground chili :)
