Pomelo Thai Salad
Last month, I got the pomelo from Chinese New Year. Someone told that the ripped pomelo can be kept up to 2 months with room temperature(in Thai 25 - 30 °C). I use it after kept almost 1 months and its still be good condition :)
In Thai, we call this menu "Yum Som O" (Yum = Thai Salad, Som O = Pomelo)
I will show you the way i peel my pomelo
Cut to top of pomelo (my cut is too deep)
Divide into 1/6
Use your finger to peel
Got it !!
Ingredients (for 2 dishes)
1. 1/2 of pomelo
2. coconut sugar 4 tbs.
3. tamarind paste 4 tbs.
4. 1/2 of lime
5. sliced shallots (2-3 pieces of shallots)6. roast cashew nuts
7. dried shrimp
8. a bit of chili (i'm not like spicy)
9. fish sauce 2 tbs.
10. a bit coriander
Mix the tamarind and coconut paste until the sugar dissolve
Add lime, fish sauce, and chili
Mix well and put shallots, pomelo, shrimp, cashew nut and coriander ... stir again
Finish !!

Thai Dessert: Banana in Syrup
This
is the way to utilize your banana and can preserve it from rotten. It is suit
for unripe banana ( a bit greenish and yellowish banana). Of course, bananas
come from the same bunch of my last entry. Hope you enjoy cooking J

to said, I forgot to take a photo when cooking. But it’s very easy and I think
you can do without guide pictures.
Ingredients
(for 4 serves)
Culivated bananas (unripe) 8 pieces
Limewater to soak the
banana
Salt 2 tsp.
Sugar
paste 50 g.
White/Brown
sugar 50 g.
Water Up to
you pot (to drown the banana)
A bit of lime/lemon to prevent sugar from crystallization
This
is Limewater. I use Google translation but not sure it’s the same I use. This
will help your banana becomes crisp and not be mushy.
Put
the banana into limewater for 15 min – 1 hour. Time depend on the ripe level of
banana. (If more ripe, more time use) For my unripe banana, I soak only 15 min.
Mix
all ingredients into rice cooker pot. Press the cook button. Stir until all
sugar dissolves then put banana. Open the pot lid and wait until the banana
turn into red and the water becomes viscous syrup. (About 3 hours). Add lime in syrup then stir. After that stop heating.
Keep
in mind to cooking in low heat and be patient with the cooking time for the
great result!!

Kluoi Buad Shee (Banana in Coconut Milk)
Today I get a lot of bananas from my neighbor. In Thai, banana is very common and cheap. Ancient Thai people use this plant long time ago.

I searched the way to utilize my banana, and got this menu :)
Ingredients (for 4 serves)
Bananas .................................9 pieces (1/2 bunch)
Coconut powder .......................60 g.
Coconut sugar (sugar paste) ..........30 g.
Salt
Water
White sesame (for topping)
Let's do it (this menu is suit for ripe banana with yellowish color)
Cut the top and the bottom
Put banana in room's temperature water, add 1 tsp of salt
Put on the stove with high heat (I use induction cooker) when the water boil turn to low heat. Total time on stove is 8 minutes.
Peel of the banana skin, remove the filament
Cut the banana into 1/4 piece
Divide the coconut powder to 2 portions equally
add warm water to both portion of coconut powder then stir it. For first portion add 1/2 mug of water (with room's temperature)
This is a sugar paste made from coconut sugar, more aroma and softer sweet than white sugar
Cook the first portion of coconut milk with low heat with sugar paste, 1 tsp of salt. When the sugar melts, add the banana and gently stir
After boiling, add second portion of coconut milk and stop heating
Roast the sesame
